It has been raining at night around here on and off for the past week or so.  I’m blaming my recent urge to clean every square inch of the house on this rain.  Why the rain you ask?  My logic never quite makes sense but: I’m still stuck on Iowa season changes.  Where rain = spring and spring = spring cleaning.  Yes, makes perfect sense.

My cleaning included the refrigerator finding that we have little food and instead tons and tons of condiments and the random meal ingredient.  As a result this post is about pulling it all together, in my case carefully selecting from a limited fridge to create a yummy pizza.  The contents of my refrigerator turned up: spinach, garlic, italian sausage (okay, that was in the freezer), sliced deli cheese, and a lemon.  Per usual I’m going to cheat and use pre-made pizza crust, but making your own would be fine – Either way I always stick to a thinner crust.

Sausage, Spinach, and Provolone Pizza

Ingredients
1 pre-made pizza dough
4 slices of provolone cheese
4-5 garlic cloves, sliced
Olive oil
Three handfuls of spinach
About 3/4 lb of sausage
Salt & pepper to taste
Juice and zest of one lemon

Directions
Brush pizza dough with olive oil and season with salt and pepper. Thinly slice garlic cloves and place slices all over the pizza (I say the more the better, but use your judgement based on your preference) – leave enough of an edge around the pizza dough for a crust. Arrange the provolone slices on the pizza (about 3-4 slices).

Meanwhile cook the sausage in a frying pan. When the sausage is nearly done add in the spinach and cook until it wilts down. Top the pizza with the sausage/spinach mixture and lemon zest and bake for about 12-15 minutes (Follow the instructions on the pizza dough wrapper. Typically 400 degrees F).

After removing from the oven sprinkle lemon juice over the entire pizza. Cut and Enjoy!
