After nearly a month of preparation…Halloween week is finally here.  My friend Jennie and I thought we better celebrate appropriately by baking sugar cookies, coloring frosting, and sometimes going overboard with sprinkle decorations.  Jennie is vegan so we tried out a vegan sugar cookie recipe, and I assure you they taste yummy (even coming from a cheese & dairy loving freak).

We used a simple icing recipe: water, vanilla, powdered sugar and food dye (for color). Substituting soy milk for water would also work.  Just remember, a little liquid goes a long way.

Vegan Sugar Cookies
Makes about 36 cookies

Ingredients
1 cup vegan butter
3 3/4 cups all-purpose flour
1 cup vegan white sugar
2 teaspoons baking powder
2 whole egg replacements
1/4 cup Tofutti cream cheese
1 teaspoon vanilla extract

Directions
First, preheat the oven to 350 degrees.

In a large bowl, cream together the vegan butter and sugar. Once it’s light and fluffy scrape the bowl and add the vanilla. Next gradually add the egg replacements while stirring. Scrape the bowl. Next add the tofu cream cheese and beat until incorporated. In a separate bowl whisk the baking powder and flour together. Finally add the flour mixture in small batches until completely incorporated.

Next cut a piece of parchment paper and lay it on a working surface. Place about ¼ of the dough on the right half of the parchment paper, so that the left half can be folded over the dough. After covering the dough in parchment paper, you’ll need to roll the dough to ¼ inch thickness with a rolling pin. Repeat until all the dough has been rolled out. Place the flat dough sheets in the freezer for about 30 minutes or until firm

After the dough is firm place the sheet on a working surface and cut out shapes with cookie cutters. Place cookies on parchment paper lined baking sheets and bake for approximately 12-14 minutes (you’ll want to take them out just at the edges are browning, but the tops will still be white). They don’t spread out, so don’t worry about spacing cookies out. Cool on a rack before frosting!
